Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup almonds, roughly chopped Shop
- 1/3 cup raw wildflower honey Shop
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/2 cup dried tart cherries Shop
- 1/2 cup dried apricots, chopped Shop
Method
- Heat the oven to 325°F and line a large baking sheet with parchment paper.
- Mix the oats, almonds, cinnamon and salt in a large bowl.
- Whisk the honey, oil and vanilla together, pour over the oats and stir until every flake is coated.
- Spread the mixture on the baking sheet and press it down firmly with a spatula.
- Bake for 20 to 25 minutes, rotating the pan halfway, until golden. Do not stir if you want large clusters.
- Let the granola cool completely on the pan; it crisps as it cools. Break it into clusters and stir in the cherries and apricots.
Tips and swaps
- Add the dried fruit after baking so it stays soft rather than turning hard.
- Swap the almonds for pecans or pistachios, or use chopped figs instead of apricots.
- For extra-large clusters, whisk 1 egg white into the honey mixture.
Storage
Store in an airtight jar at room temperature for up to 2 weeks.

Questions about this recipe
Why is my granola not clumping?
Press it down firmly before baking, do not stir it while it bakes, and let it cool completely before breaking it up. An egg white in the honey mixture makes bigger clusters.
Can I make this granola without oil?
You can replace the oil with unsweetened applesauce, but the granola will be softer and less crisp.
