Ingredients
- 12 Medjool dates, pitted (about 1 cup packed) Shop
- 1 cup walnut halves Shop
- 1 tablespoon raw wildflower honey Shop
- 1/2 teaspoon ground cinnamon
- 1 pinch fine sea salt
- 2 tablespoons unsweetened shredded coconut, for rolling (optional)
Method
- Pulse the walnuts in a food processor until finely chopped, about 10 pulses. Do not run it so long that they turn to butter.
- Add the dates, honey, cinnamon and salt. Process for 30 to 60 seconds, until the mixture clumps together when pressed between two fingers.
- Scoop level tablespoons and roll each one into a ball between your palms. Wet your hands slightly if the mixture sticks.
- Roll the bites in shredded coconut if you like, then chill for 30 minutes to firm up.
Tips and swaps
- If your dates are dry, soak them in warm water for 10 minutes and pat them dry before processing.
- Swap the walnuts for pecans or almonds, or add 2 tablespoons of chopped tart cherries for a sharper bite.
- The honey is optional if your dates are very soft and sweet; it mainly helps the mixture bind.
Storage
Keep the bites in a sealed container in the refrigerator for up to 1 week, or freeze them for up to 3 months.

Questions about this recipe
Do date bites need to be refrigerated?
Yes. Keep them chilled in a sealed container. They hold their shape best cold and keep for about a week.
Can I make date bites without a food processor?
Yes, but it takes longer. Chop the walnuts and dates very finely by hand, then knead them with the honey until the mixture holds together.
