Cooking with honey: three rules
Honey is sweeter than sugar and browns faster, so a few adjustments help.
- Replace up to half the sugar with honey to start. For each cup of honey, cut other liquids by ¼ cup and add about ½ teaspoon of baking soda.
- Lower the oven by about 25°F, because honey browns faster than sugar.
- Coat the measuring spoon with a little oil first, and the honey slides right out.
